QUEEN’S TOASTED CHEESE.
½ lb. of cheese;
The cheese should be grated and the ale and champagne added to it.
3 tablespoonfuls of ale;
buttered toast;
cayenne;
1 small glass of champagne.
Mix thoroughly in a chafing-dish and simmer for 10 minutes,
stirring all the time. Season well. Have ready some hot buttered toast,
and serve immediately on a piece of toast on each plate.
4 to 6 persons.
Time-10 minutes.
