PARKIN BISCUITS.
½ lb. each of flour and oatmeal;
4 tablespoons of golden syrup or treacle;
1 teaspoonful of ground ginger;
6 oz of lard, or margarine;
4 oz brown sugar;
1 teaspoon of mixed spice;
1 teaspoon of baking powder;
6 or 7 almonds;
A pinch of salt.
Mix together the flour, salt, spices, and baking powder, with the ginger in a basin;
Add the oatmeal and mix well. Warm the sugar,
Syrup and fat in a small pan and when melted stir them into the centre of the flour.
Mix very well to a smooth paste. Shape this into small balls,
Flatten them slightly, place them on a greased baking-tin, and put 1 or 2
Strips of blanched and shredded almonds on the top of each.
Bake in a moderate oven from 15 to 20 minutes or until firm.
Time – 15 minutes
