JUMBLES

1 ½ lb of flour;
½ lb of castor sugar;
Lemon essence;
2 eggs;
¼ teaspoonful of grated nutmeg;
¾ lb of butter or margarine;
A pinch of salt.

Mix together the flour, salt and nutmeg in a basin. Rub in the butter, add the sugar. Beat up the eggs And stir in lightly. Add a few drops of lemon essence, Mix all well together. If too dry, add a very little milk or another egg to the mixture. Roll it out on a floured board about 1/8 inch thick. Cut it into thin strips about 6 inches in length. Roll these round in the shape of the letter “S,” or like a scroll, sprinkle with castor sugar, and place them on a greased baking-tin and bake for 10 minutes in a quick oven.
Time – 10 minutes.
