5lb. of loaf sugar;
Put the sugar, ginger, and water in a pan and boil for 1 hour. When cold, add the juice and thinly peeled rind of the lemons. Put the yeast on the toast and add. Put all into a tub and cover with a thick cloth or rug for 2 or 3 days, then strain it through a cloth, bottle it, and cork securely, and tie the cork down. This will be ready to drink in 4 or 5 days. If stronger ginger beer is desired, add a little more ginger.
HOW TO MAKE GINGER BEER
3 gallons of water;
¼ teacupful of brewer’s yeast;
3oz of ground ginger;
5 lemons;
Slice of toast.
Time - 3 days.
