APPLE FRITTERS.

3 apples; 1 lemon;
half pint of fritter batter (No. 1 or 2);
castor sugar;
1lb of lard.
The apples should be pared and cored without breaking them and cut into rings about 1/8 inch thick,
which should be sprinkled with the sugar and lemon juice. Make some lard hot in a deep frying-pan,
and when a faint blue smoke begins to rise, dip each apple ring in the batter and drop it into the fat.
Fry for about 6 minutes. Lower the heat under the fat after the first minute, so the apple may cook through.
Drain on soft paper. Serve on a d'oyley on a hot dish. Sift sugar over them.
Note.-Any fruit may be used in the same way.
Bananas are sliced lengthways and then across.
For 6 persons. Time - 6 minutes.
