HOW TO MAKE PERFECT COFFEE.

Coffee is best when ground at home and all housewives should possess a coffee mill and grind their own coffee. If a mill is not used it is advisable to buy coffee in small quantities only from a reliable dealer, where it is roasted daily. It is not advisable to use chicory, as it gives a slightly bitter taste to coffee, but some people prefer it, and this is a matter of individual tastes. The usual proportions for making coffee are1 tablespoonful of freshly ground coffee per person. The water must be freshly boiled and absolutely boiling as for tea. There are various kinds of coffee pots on the market, most of them being fitted with a percolator of some sort. Should no percolator be supplied, sew a muslin bag on to a metal ring which should fit the inside of the coffee-pot. Pour some boiling water through the bag into the coffee-pot, then empty it. Put the coffee into the bag or percolator and pour the boiling water gently over the coffee, letting it filter slowly. Keep the coffee-pot in a warm place while making the coffee, and continue pouring through the boiling water until the requisite amount is used. Half a pint of water is sufficient for 1 heaped tablespoonful of coffee, but when the coffee is required weaker, more water can be used. Coffee is always served with hot milk.

CAFE AU LAITE.
This is made with a glass of hot milk with just a dash of coffee added.

VIENNESE COFFEE.
This is very good strong coffee served with 1 spoonful of whipped cream on the top of each cup.
