CHOCOLATE BEVERAGE

2 oz of plain chocolate;
1 pint of milk;
1 gill of water;
Sugar to taste.

Grate the chocolate into a pan. Add the water, stir over the fire with a wooden spoon until thick, then work it very quickly with the spoon to make it frothy, stirring the boiling milk in gradually. If stirred very vigorously the chocolate should become very frothy.
- Time 12 to 15 minutes.
