CHEESE SCONES
8 oz of flour; (self raising)
Mix together the flour, salt and baking powder.
Place in a fairly hot oven (about 220 C).
Time about 10 or 15 minutes, leave to cool on wire rack.
½ level tsp of salt;
1 level tsp baking powder;
2 oz butter or margarine or lard;
¼ pint of milk;
4 0z of strong cheese;
2 tsp of mustard;
And run it through a sieve. Rub in the butter, stir in the cheese.
Add the mustard to the milk and then whisk.
Make a well in the middle of the mixture and add in sufficient milk,
To form a soft dough.
Turn this out onto a floured board.
Roll it out to ½ inch thick.
Cut into rounds of about 2 inches.
Place on a greased tin and paste milk on the tops.
Sprinkle some cheese on top.
Makes about 15.
